One of the highlights of our trip to Marrakech was a half-day cooking class on Moroccan cuisine. We traveled to a riyad just outside of the Medina and spent the morning preparing chicken tagine with preserved lemon, a tomato and pepper salad and grilled fruit for dessert. We were assisted by an experienced Moroccan chef, who really kept us from making a disaster. We're not even sure if the delicious dish we ate was our own, but nonetheless it was terrific.
